Steakhouse 55’s Eggs Benedict topped with their own creamy Hollandaise sauce.
With a fresh poached egg gently layered on a hearty slice of Canadian bacon on top of a toasted English muffin, and covered in a rich, creamy hollandaise sauce,
Steakhouse 55’s Eggs Benedict is divine.
Chef de cuisine Jason Martin created the entire menu for the signature restaurant here and throughout the Disneyland Hotel, but he’s particularly proud of his savory morning offerings. His recipe for Eggs Benedict bursts with flavor and adds a bit of culinary elegance to the most important meal of the day. “I wanted something decadent and good—that guests could treat themselves to while on vacation, and that also goes with the atmosphere and flavors of the restaurant,” Jason says. “I am following the classic Eggs Benedict dish in terms of what is included, and the core ingredients, of course. But we make it ours by using fresh ingredients, our own carefully crafted hollandaise sauce, and ensuring that it is made perfectly.”
And now (with only a little pleading from the D23 staff), Jason shares his oh-so-mouthwatering recipe with all of us so you can make this culinary masterpiece at home. Bon appétit!
Ingredients
Hollandaise Sauce
3/4 cup (11/2 sticks) butter
2 large egg yolks
Dash Tabasco
Dash Worcestershire sauce
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 tablespoons water
Eggs Benedict
8 slices Canadian bacon
1/4 cup white distilled vinegar
8 large eggs
4 English muffins
1 teaspoon chives
Preparation
Hollandaise Sauce
Melt butter in a small saucepan on low heat. When the butter has melted completely, tilt the pan and skim off the foamy liquid that rises to the surface to clarify the butter. Will need 1/2 cup for recipe. Set aside and keep warm. Fill two-quart saucepan with water and bring to a boil over medium-high heat. Reduce heat to low to maintain a simmer. Whisk egg yolks, Tabasco, Worcestershire sauce, lemon juice, salt, pepper, and water in medium mixing bowl for approximately one-to-two minutes or until mixture lightens in color. Place the mixing bowl over the simmering water and whisk to cook the egg mixture. Move bowl on and off the heat to avoid scrambling the eggs—approximately 10 seconds on, 10 seconds off the heat for three-to-five minutes or until egg mixture coats the back of a spoon. Remove the bowl from the heat and gradually whisk in small amounts of the warm clarified butter, one-to-two tablespoons at a time, mixing thoroughly before adding more butter. Season to taste with salt and pepper. Set aside and keep warm.
Eggs Benedict
Cook Canadian bacon in large skillet over medium high heat until golden brown on both sides. Set aside and keep warm. Fill two-quart saucepan 1/2 full with water. Add vinegar and bring to a simmer over low heat. Crack the eggs into the water and let them cook for two-to-three minutes until set and egg whites turn opaque. Lift the eggs out with a slotted spoon to drain the water. Set aside and keep warm.
To Serve
Cut the English muffins in half and toast. Place two English muffin halves on each plate. Place Canadian bacon on top each English muffin. Place cooked egg on top of the Canadian bacon. Spoon Hollandaise sauce over eggs. Garnish with chives.

2 3/4 cups heavy cream
1/2 cup whole milk
1/2 cup plus 2 tablespoons granulated sugar
9 egg yolks
1 1/2 tablespoons maple extract
12 teaspoons sugar for caramelized topping
6 ginger-flavored cookies
Preparation
Preheat oven to 325°F. Place six 3/4-cup custard cups in large roasting pan. Combine cream, milk, and sugar in a medium saucepan over medium heat. Slowly bring mixture to a simmer, whisking constantly to dissolve sugar. When sugar is dissolved, stir every few minutes while the mixture is heating to avoid scalding. When small bubbles appear around the edges, remove milk mixture from heat. Whisk egg yolks and maple extract together in a large bowl. Slowly add hot cream mixture to egg yolk mixture, whisking constantly. Divide among custard cups in pan. Pour enough hot water into roasting pan to come halfway up sides of custard cups. Bake custards until center moves only slightly when cups are gently shaken, about 55 minutes. Remove custards from pan. Refrigerate until thoroughly cool. Sprinkle 2 teaspoons sugar evenly over each custard. Working with one custard at a time, hold kitchen torch so that flame is 2 inches above surface. Direct flame so that sugar melts and browns, about 2 minutes. (If you don’t have a kitchen torch, preheat broiler. Sieve 2 teaspoons brown sugar atop each custard. Place dishes on small baking sheet. Broil until sugar just starts to caramelize, rotating sheet for even browning, about 2 minutes, then chill until topping hardens, about 2 hours.) Top with a ginger-flavored cookie.

Head to Palm Springs, California, via Highway 111, and you’ll see the astonishing natural beauty of the South Mojave Desert. Low-lying brush, lizards, cacti, and tumbleweeds provide an idyllic backdrop as the narrow roadway leads you to the town’s entrance on the northern side of the towering San Jacinto Mountains. Movie stars have been heading to Palm Springs since the 1920s, and this desert oasis still casts its spell on Southern Californians searching for the perfect weekend getaway.
Vacationers from around the world have traveled here for world-class golf, spectacular resorts, and one of the world’s most dramatic desert settings, but few of them are aware of a very special enclave, located just a few minutes from the Village of Palm Springs, that holds a special place in Disney history: the Smoke Tree Ranch. Here, among the breathtaking beauty of the mountains and the fragrant scent of desert flowers is a world removed, a place that looks very much the same as it did when a man named Walt Disney would take his family here, leaving the pressures of the Studio behind and enjoying long weekends and holidays with the ones he loved in this one-of-a-kind dude ranch.
Walt regularly wore an embroidered tie with the Smoke Tree Ranch logo, derived from the original Smoke Tree Ranch brand—on episodes of Disneyland and Walt Disney’s World of Color.
Homes on the Range
Smoke Tree Ranch is made up of an enclave of privately owned homes and rentable guest cottages on 375 acres of natural desert. Those who’ve purchased lots and built homes on the property are fondly referred to as “colonists,” and both the colonists and the cottage guests have access to the property’s all-inclusive three-meals-a-day dining plan (don’t be late for the dinner bell!), horseback riding, and other ranch activities. Today there are two homes and six cottages, with Disney beginnings, that currently reside on the Smoke Tree Ranch.
Tracy Conrad, chief operating officer of Smoke Tree Ranch believes Walt probably heard of the ranch early on in his life, since he often visited Palm Springs to play polo. “But Smoke Tree Ranch had a thing about no show people,” Tracy says. “They didn’t want the attention. The people who lived here were the captains of industry—I lovingly refer to them as the brand names, the last names.” Walt eventually became a member of Smoke Tree Ranch in 1946 and built his own house on the property in 1948. Later, a recreational facility called Disney Hall and Disney cottages were added to the ranch. “Walt charmed them,” Tracy says. “He would bring down rough clips from movies that were in the making and show them to all the kids on the ranch in advance of the movie being released.”
“I don’t think people really knew that he was an equestrian,” Tracy Conrad, chief operating officer, Smoke Tree Ranch, says. “And he was such a handsome figure on a horse.”
The first Disney house at Smoke Tree “was built by William Cody, a famous architect known for his mid-century modern style,” Tracy says. And Walt enjoyed several years at this residence until his dream for Disneyland forced him to sell off his assets. Among other things, Walt sold off his property at the ranch to place a down payment on Disneyland. “He asked a few of the colonists if they wanted to invest in Disneyland,” Tracy says. “I’m sure they regret not having done so now.” But after Disneyland proved successful, he was able to buy a second lot and build another house, and he moved into his second home on the ranch in 1957. And Walt, train connoisseur that he was, had the idea to put a train around his ranch house. “He was just a big kid,” Tracy laughs. “But the architectural committee would not let him do it because there are strict rules on maintaining the desert look. Walt compromised and put a sidewalk around his house so the kids could ride their bicycles and tricycles around the house instead.”
Very Happy Trails
“I don’t think people really knew that he was an equestrian,” Tracy says of Walt. “And he was such a handsome figure on a horse.” Walt often accompanied his wife, Lilly, out on breakfast horseback rides, a ranch tradition that ended with a pancake breakfast in the desert with a large skillet to cook up the pancakes. A group would sit together at long picnic tables and enjoy their breakfast in the fresh outdoor air. “People came here to play cowboy, and the ranch was at the center of it,” Tracy says. “They were here to have a good time and relax.”
There were desert activities aplenty at Smoke Tree Ranch, and almost all of them were meant to bring families together. It wasn’t uncommon to see a large group of buckaroos gathered together, singing along with a guitar. Some homes included rooftop decks for prime sunbathing in the day and cozy stargazing at night. “No houses, prior to 1946, had their own pool so everyone congregated together and they played bridge and had parties,” Tracy explains. “It was like adult summer camp. They would have German Oktoberfest and everyone would wear lederhosen. And all the holidays had square dancing, marshmallow roasting, cowboy crooning, the whole nine yards.”

Walt took a particular interest in the Smoke Tree tradition of lawn bowling. Along with the other lawn bowling enthusiasts at the ranch, Walt would get dressed up in all white attire and spend an afternoon rolling lopsided balls across a 100-foot green space. “He was an avid lawn bowler, and he sponsored a tournament,” Tracy says. “He and Lilly gave prizes that were engraved with their signatures.” Walt had his share of worthy challengers, which made the sport even more enthralling.
“I think he was quite happy here at Smoke Tree Ranch,” Tracy reflects. Walt’s love of the wild frontier lives on in films, theme park experiences, and Walt’s Chili, the quintessential cowboy meal, which is still offered at the Walt Disney Studios commissary today. Walt Disney’s True-Life Adventure: The Living Desert, which won an Oscar® in 1954 for Best Documentary, showcased the creatures and beauty of the desert. And it’s easy to see Walt’s wild-west influences in Disney parks—Disneyland Frontierland’s Stagecoach, Nature’s Wonderland, and Rainbow Caverns Mine Train were a few of the early attractions inspired by the wilderness. While many people visit the desert to enjoy high temperatures and sunshine, it was the warmth of the people at Smoke Tree Ranch that kept Walt coming back time and again. And that’s a ranch tradition that will never go out of style.

The Mark in Question
You’ve probably seen the brand for Smoke Tree Ranch—and by brand we mean the hot iron a cowboy uses to mark his cattle—many times and passed it off as a symbol of Asian origin. After all, Walt regularly wore an embroidered tie with the Smoke Tree Ranch logo, derived from the original Smoke Tree Ranch brand—on episodes of Disneyland and Walt Disney’s Wonderful World of Color. The design is based on the letters S, T, and R.) Tracy points out an example of Walt wearing the brand from an episode of Wonderful World of Color.” In The Nine Lives of Elfego Baca, he’s wearing a dark tie with the insignia embroidered in white,” she says. “He knew what he was doing by letting himself go on the program with that on. It was a little silly since no one else would know what it was unless they were part of the club.”
Disney Legend Blaine Gibson, known for his contributions to Walt Disney Imagineering and Disney Animation, sculpted the Smoke Tree Ranch brand directly on the famously known “Partners” statue in 1993. You can see a version of Blaine’s masterpiece in several places: the center of The Hub at Disneyland, in The Hub of many other Disney parks, and at The Walt Disney Studios’ Legends Plaza.
“It’s amusing to look on the Internet to see what people postulate that it is,” Tracy points out. Rumors and stories about the symbol range from it referencing a character in the Chinese alphabet to a sign that Walt was part of a secret society. “It was a common sight—everyone wore bolo ties on the ranch—with that insignia, and Walt was no different,” Tracy adds. “The brand was designed in the ’20s, and because the lines in it are too close together, it was a really bad brand for a horse, but it’s a good brand for dudes.”
It sure was good enough for a dude named Walt Disney.

Ingredients
1 16.5-ounce package refrigerated sugar cookie dough
1 cup raspberry jam
1/2 cup sliced almonds
1/2 tablespoon granulated sugar
Preparation
Preheat oven to 350ºF.
Cut a sheet of parchment paper to fit inside a regular sheet pan.
Place the parchment paper rectangle on the counter, and place cookie dough on the parchment paper.
Roll out cookie dough to cover most of the rectangle, leaving a 1/2-inch border of paper. The dough should be approximately 1/8-inch thick.
Carefully transfer dough on parchment to the sheet pan.
Spoon jam onto dough, and use the back of a spoon to spread it evenly over dough.
Evenly sprinkle with almonds and sugar.
Bake for 15 to 18 minutes.
Transfer sheet pan to a wire rack to cool completely, at least 1 hour.
When cool, slide baked dough off of sheet pan.
Cut into rectangles using a pizza cutter or a knife.
Store cookies in an airtight container, separating layers with pieces of parchment paper to prevent them from sticking together.
Chef’s Note
If you don’t like raspberry jam, you can use your favorite flavor.

Strawberry Sauce 1 cup strawberry preserves 1/2 cup water 1 teaspoon freshly squeezed lemon juice 1 cup heavy cream 1/4 cup sugar 1 teaspoon pure vanilla extract
Preparation
In a 3- or 4-quart saucepan, bring 11/2 cups of water to a boil with the salt. Add the rice, reduce heat to medium-low, and cook the rice for 15 minutes or until all of the water has been absorbed. Add the milk and simmer for 20 minutes or until all of the milk has been absorbed. Transfer the mixture to a bowl and let cool to room temperature. Meanwhile, in a blender, combine the strawberry preserves, 1/2 cup water, and lemon juice and blend until smooth. In a bowl, whip the cream with the sugar and vanilla. With a rubber spatula, fold the whipped cream mixture into the rice.
To Serve: Transfer the rice pudding to a large bowl or to individual serving bowls and drizzle with strawberry sauce.
Yield: 4 to 6 servings; makes about 5 cups rice pudding and 1 cup strawberry sauce.

Ingredients
Pumpkin Beignets
1/2 tsp. dry yeast
1/4 cup warm water
4 cups all-purpose flour
1 cup canned pumpkin puree
1/4 cup sugar
1/4 cup heavy cream
1/4 cup hot water
1 egg
2 tbsp. vegetable shortening
1/2 tsp. salt
vegetable oil, for frying
Maple Glaze
3 tbsp. butter
1/4 cup maple syrup
1 cup powdered sugar
Preparation
Pumpkin Beignets
Sprinkle yeast over warm water in a small bowl, stirring to dissolve. Let stand for 5 minutes. Combine flour, pumpkin puree, sugar, heavy cream, hot water, egg, shortening, and salt in a large bowl; stir in yeast mixture. Mix dough just until combined and smooth. Let dough rest in bowl, covered with a clean kitchen towel, 30 minutes. Transfer dough to a well-floured surface. Pat to about 1/4-inch thickness and cut into 2-inch squares. Cover with a clean kitchen towel and let dough rise in a warm, draft-free area, about 1 to 1 1/2 hours. Heat three inches of vegetable oil to 350°F in a deep, heavy pot over medium-high heat. Fry beignets until golden brown, about 2 to 3 minutes, turning as soon as they brown on one side. Remove with tongs or a slotted spoon and place on paper towels to drain.
Maple Glaze
Combine butter and maple syrup in a medium microwave-safe bowl. Microwave until butter melts. Whisk in powdered sugar until smooth. Drizzle warm beignets with maple glaze and serve immediately.

On the opening day of Disneyland on July 17, 1955, Walt Disney made history in countless ways. One of those enduring achievements was combining popular stars of the day with his classic talent for storytelling. So along with Snow White, Dumbo, and Mr. Toad on hand that day, Davy Crockett star Fess Parker led the parade and the Mouseketeers made their debut—Mickey Mouse Club wouldn’t premiere until that October. And of course, Walt himself was there—already a huge celebrity to millions of people around the globe.
The tradition of blending storytelling with celebrities has continued to this day. In celebration of the 40th anniversary of Walt Disney World, D23 speaks with some of the talented individuals who have appeared in Walt Disney World attractions over the years, lending their voices, bodies, and sometimes hours of time in a make-up chair to create magic for park guests.

I’m often stopped at grocery stores by rabid Test Track fans who say how much they like the ride, and it always takes me a few minutes to figure out what they’re talking about—I did the Test Track job in 1997. I remember we shot the “security cam” footage in one day at a stage in Hollywood. The footage itself had to be one continuous take because it was a security cam and there were no cuts! So if I messed up five minutes into it, I had to start over from the beginning. Very arduous, but we eventually got it.

I know what it is like to wait in line at Disney World. Sometimes the wait can be fun, because they’ve arranged it so the line is as entertaining as possible. That’s what we discussed while recording. We tried to prepare them for the ride by telling them a story beforehand, getting them involved and prepared for what was to come. I also remember the tour they gave me of the Imagineering building. Seeing the old black and white photos from the ’50s and ’60s. Seeing the miniature layout model. Seeing the plans for future attractions. These are as fascinating as an Epcot exhibit.

My grandchildren know me as Mr. Potato Head. For the ride, I was just in a sound booth by myself. Lee [Unkrich], who directed it, would direct me. I recorded about 300 or 400 lines. “You sir, step out of the line!” And the ride is a big draw! I was there when it opened. It was great. My grandkids love the ride. It’s fun for kids. They thought it was very exciting. I was very pleased with that.
I’ve been a bird and a potato . . . Now I need to train to be an elf or a monkey.
[The Enchanted Tiki Room] was fun. Phil [Hartman, who voiced agent Morris opposite Don] was a great guy—a delightful guy and a very funny comedian. Bringing my own children to the opening of Disney’s Animal Kingdom was one of my proudest days as a father. Even if they were terrified by Hopper. Oh, and the spiders.

Then we were like this [eyes wide and shaking], so I said, “Joe, let’s go do the Tower of Terror and it will get us straight!” And we did, and we were able to walk home after that! What a joy! And I can go down there and ride it whenever I want!

I have never been so excited about the adrenal system. Nor did I know what that was before I went in to record—so working at Disney was an educational experience. I read for the bile duct first but didn’t land the role. I actually plan to work in the Haunted Mansion after I die.

The whole Nemo experience was amazing, I started with the film at age seven and at age 12, I completed my Nemo life with The Seas with Nemo and Friends. My biggest memory of voicing the ride was recording the song “In the Big Blue World.” My pitch wasn’t the greatest back then, but I think it added to the charm of the character.
My friends were singing “In the Big Blue World” all day just to annoy me.
My little sister did the commercial advertising the Seas ride, so she got to experience it before I did. She thought it was awesome. I actually, experienced the ride for the first time this past winter in 2010 when I spent winter break in Florida with my youth group. Weird at age 16 to hear yourself at 12. My friends were singing “In the Big Blue World” all day just to annoy me.
“I was really flattered to hear that George Lucas named the character Aly San San after me,” Allison Janney says.

I have always been a huge fan of Disney. Being able to play Peach in Finding Nemo was really a dream come true. But then to be asked to voice a character on a Disney attraction—especially one as legendary as Star Tours—was unbelievable. The Disney parks have a lot of meaning for me, and to now be a part of their history is truly magical. Recording the role was so much fun—I was able to play around, and all the Imagineers were incredibly inspiring to work with. I was really flattered to hear that George Lucas named the character Aly San San after me. How great is that? I don’t think she looks very much like me, though.
Unfurl the flags, strike up the bands, and light the fireworks… it’s time for an Independence Day salute to America on Parade, Disney’s jubilee of music, emotion, and memorable moments designed to honor the American Bicentennial in style. Proclaimed as a “new achievement in Disney pageantry,” this colorful tribute to the history and legacy of the United States has itself earned an honored place in the annals of Disney, for America on Parade is one of the most celebrated presentations in Disney theme park history. Intended to convey the festive feel of the Fourth of July—whethere it’s the holiday or not!—this spectacular homage to America’s history, people, and traditions was characterized by Disney as a “birthday party for the country.” As a special Independence Day treat, here’s a red, white, and blue look at this most patriotic of all Disney parades.
Mickey, Donald and Goofy love a parade as the symbol of America on Parade. Originally created in 1939, this art was inspired by The Spirit of ’76, painted by American artist Archibald MacNeal Willard in Wellington, Ohio after, appropriately enough, he saw a parade pass through the town square. That most famous of American paintings was exhibited at the 1876 Centennial Exposition in Philadelphia, while this iconic Mickey Mouse image was widely reproduced during Disney’s Bicentennial celebration.
Walt Disney once said of Disneyland, “There is an American theme behind the whole park. I believe in emphasizing the story of what made America great and what will keep it great.” There was no better setting than Disneyland and the then-new (as of 1971) Walt Disney World resort to salute the Bicentennial of the United States. From small towns to big cities and from each of the fifty states to the U.S. government itself—Congress had initiated planning in 1966—all of America was preparing to celebrate the U.S. Bicentennial in a big way. Companies and corporations including the major television networks all planned significant observations of the nation’s first two centuries, and Disney—a symbol of American success, ingenuity, and celebration—naturally decided to join in the festivities. “Because of Disney’s vast experience and expertise in producing entertainments on a grand scale,” stated the America on Parade souvenir program, “it was very fitting, as America came to its 200th anniversary, that Walt Disney’s company take a leading role in using Disneyland and Walt Disney World as a showcase for the best that America has been and has to offer.”
Disney News magazine devoted not one but two covers to America on Parade, including this colorful scene for the Fall 1975 issue. Though the parade featured Disney characters—in addition to headliners Mickey, Donald and Goofy, Winnie the Pooh, Tigger, Snow White and the Seven Dwarfs, and even the Day Glo-colored Scat Cat band from The Aristocats (1970) put in an appearance—the true stars were the People of America, seen here in the Southern riverboat scene. These oversized performers made a tremendous impact, and the People of America costumes were later adapted for the early years of Epcot as the “People of the World” at World Showcase.
Development of what would become America on Parade began in 1974 under the direction of entertainment head, Disney Legend Bob Jani. Classic Disney inspiration came from the July 1939 Mickey Mouse Magazine cover. Attributed to Disney publicity artist Hank Porter, this specially created art was an affectionate tribute to the famous painting The Spirit of ’76 , featuring Mickey Mouse as flag bearer, Donald Duck as fifer, and Goofy as drummer, all decked out in Colonial dress. The delightful artwork inspired not only the lead parade unit—the three patriotic pals heading up the grand procession on a float boasting a stylized 18-foot American Eagle—but also became the patriot-pleasing logo of the entire America on Parade pageant.
Rather than focus on America’s many battles for freedom, the parade’s creators concentrated on the ideals, principles and important figures that shaped the nation. The Disney creative team immersed themselves in extensive research on the accomplishments of America’s leaders as well as the daily life of its citizens. The parade would also salute memorable moments (the first Thanksgiving, Sunday in the park, school days, etc.), significant American innovations, and even popular pastimes.
With an event as monumental as the 200th birthday of the land of the free and the home of the brave, the parade’s designers knew that their show would have to be big indeed. The entire spectacle would be presented in larger-than-life proportions, not on mere floats, but on enormous moving “stages.” According to Kevin Kidney, Disney historian, artist and co-designer of the newly launched Mickey’s Soundsational Parade at Disneyland Park, intricate scale models for each of the proposed stages were hand-made by Disneyland artist/designer Clare Graham and a team of artists from the park’s Entertainment department. These charming models were intricately crafted from a variety of materials including colored felt, paper, wood, wire, and illustration board, and were used as guides in the building of the parade’s full-sized stages.
Ultimately, fifty fanciful units were decided upon, and the Disney team assigned some of the nation’s top set design manufacturers—builders of everything from elaborate floats for the Tournament of Roses Parade to glamorous sets for movies and Las Vegas shows—to make the miniature models immense parade-ready realities. Construction began in workshops from sea to shining sea and the star-spangled stages, averaging more than twenty feet in height, with some as long as thirty feet, had to be constructed in duplicate, as this was the first parade to be simultaneously presented at both Disneyland and Walt Disney World. Before arriving in California or Florida some of the stages traveled over 3,000 miles.
This 1975 Little Golden Book was one of the many pieces of memorabilia created to celebrate America on Parade. Other publications included Disney’s America on Parade: A History of the U.S.A. in a Dazzling, Fun-Filled Pageant with a text by David Jacobs (apparently the same David Jacobs who would go on to create the hit TV series Dallas). Issued in both hardcover and trade paperback editions this deluxe volume explored 200 years of U.S. history illustrated by full-color conceptual art and models as well as photos of the pageant itself.
To charmingly populate the various scenes that would unfold through the vibrant stage designs, a new family of Disney characters was created. Called the People of America, these truly unique costumed characters were at first intended to be the same approximate height as Mickey Mouse and his friends, but the designers discovered the People of America needed to be taller in order to be in scale with the giant floats. At almost eight feet tall and with fancifully oversized heads, the more than 150 doll-like figures were designed to help guests of every age see America on Parade through the eyes of a child.
Historical personages such as Christopher Columbus, Ben Franklin, and Pilgrims were playfully represented, as were such familiar American figures as Miss Liberty, Uncle Sam, Tom Sawyer and Becky Thatcher. Also numbered among this whimsical cast were everyday people like teachers, shopkeepers and athletes. Most of the enormous figures were actually alike; the differences in the personalities portrayed were mainly achieved through costuming so the wardrobe for the doll-like people was of paramount importance. Researchers and costumers worked together to find accurate fabrics for these historical costumes, and to sew them as they would have been stitched fifty, a hundred, two-hundred years ago. The material also had to be bright enough to be seen clearly by spectators, tough enough to withstand hundreds of outdoor performances, and practical enough to be cleaned easily and frequently. The outsized dolls were also given oversized wigs, hats and props, all of which had to meet the same requirements met by the costumes.
Music was of course to play a central role in this processional showcase of Americana. Premier Disney tunesmiths Richard M. Sherman and Robert B. Sherman were commissioned to create a spirited Independence Day-themed anthem. “Bob Jani, Disney’s great project creator, asked us to write a theme song for the Bicentennial park parade,” the Shermans later reported, and the new song “The Glorious Fourth” was composed in 1974.
The main melodic narrative for the fun-filled pageant was to come from favorite American standards. Research was conducted into not only songs celebrating the United States but also U.S. tunes composed to celebrate its citizens and their all-American activities. Toe-tapping favorites such as “Yankee Doodle Dandy,” “Turkey in the Straw,” “Take Me Out to the Ballgame,” and “In My Merry Oldsmobile” musically told the tale of a vibrant country at work and at play. The only Disney song included was the upbeat Oscar®-winner “Zip-A-Dee-Doo-Dah,” while the entire spectacle was stirringly climaxed with “God Bless America.”

As with every entertaining element of America on Parade, the music was presented in a novel manner, offering guests a unique listening experience. The creators of this musical jamboree wanted the well-loved songs to be presented in a unique style that was still in keeping with the nostalgic spirit of the parade. Seeking a band-organ sound, they began a search two years before America on Parade‘s projected debut for a real mechanical music box to play the selected songs. Eventually, they found a restored 1890 band organ belonging to Paul Eakin of Sikeston, Missouri. Known as Sadie Mae, the ornate instrument worked on the same principle as a player piano, except punched-hole piano books were used instead of piano rolls. This incredible music machine had some two hundred pipes including 20 trumpets, eight trombones, 17 octave violins, 17 flageolets, 17 piccolos, 20 open flutes, 17 stopped flutes, 17 clarinets, 17 cellos, and 30 bass.
Arrangements of the songs were created by music director Jim Christensen, but the team then discovered the one man in the world capable of hand-making piano books was in Belgium. Determined to settle for nothing less than the quaintly novel sound of Sadie Mae, Disney sent the musical arrangements to Belgium and had the books made. The Sadie Mae was then carefully taken apart and shipped to Nashville, where it was painstakingly reconstructed at the Grand Ole Opry to be recorded as it played the new books. Bob Jani wanted to give the old world sound of the band organ a modern twist so the 16-track masters made in Nashville were sent to Los Angeles, where musician Don Dorsey (who went on to create music for many Disney parades) was enlisted to overlay the band organ recordings with the sounds of a Moog synthesizer. The synthesizer was of course a crowd-pleasing part of the Main Street Electrical Parade, which America on Parade supplanted for the Bicentennial celebration. America on Parade also utilized the sound system developed for the Main Street Electrical Parade, with some America on Parade units broadcasting their musical themes to the parade-watchers from their own loudspeakers while others broadcast their signals to radio receivers along the parade route; then the signals were rebroadcast through loudspeakers in fixed locations in a symphony of synchronization.
The nation’s official Bicentennial Celebration kicked off in April 1975, and America on Parade first stepped off just two months later. After press previews, America on Parade debuted on June 6, 1975 at Walt Disney World and on June 12 at Disneyland. This firecracker of a procession stretched for an impressive three-quarters of a mile, that was, as the America on Parade souvenir program put it, was ” a continuously moving ‘stage’ that captures the spirit of Americana in a grand display of colorful people and settings.” After Mickey, Donald and Goofy got things off to a spirited start, the next section honored “Historical and Memorable Moments,” featuring everything from Christopher Columbus’ famous vessels to a quaint schoolhouse complete with teacher and pupils to one of the pageant’s most popular scenes: Betsy Ross sitting atop a two-story high rocker as she sewed an enormous American flag. Next, the “Contributions and Achievements” section celebrated advancements in transportation, sports, food, inventions, and entertainment including TV, the movies and the circus. The jubilant climactic sequence was “The Celebration of Independence” the highlight of which was a “Symbols of Freedom” unit starring the Statue of Liberty and Uncle Sam. This grand finale featured a marching band from a high school or college, specially invited by Disney from all 50 states to be an integral part of this extravaganza. During the summer months and holidays, America on Parade was presented twice, and the evening parade was crowned with a blazing show in the sky consisting entirely of red, white, and blue fireworks.
Televised salutes and exclusive memorabilia proclaimed America on Parade as a major event. A specially produced televsion special was syndicated to local stations for broadcast on April 3, 1976. Monsanto Night Presents Walt Disney’s America on Parade, hosted by comic televison and movie star Red Skelton, was the 16th installment of the Monsanto Night series of specials and the only one with a Disney theme. A veritable parade of collectables marched forth into the homes of fans: coins, mugs, picture and history books, plates, View-Master reels, puzzles, watches, coloring, and sticker fun books, Colorforms play sets. The America on Parade lunch box-and-thermos kit was particularly appealing. Manufactured by Aladdin Industries, creator of Disney lunch boxes since 1957, the colorful metal container featured the Mickey-Donald-Goofy art on one side and the Liberty Bell parade unit—complete with George Washington-like doll figures pulling the float—proudly parading down Main Street, U.S.A. in charming art by Aladdin artist Beverly Burge. A figural music box and a porcelain sculpture—each spotlighting the Spirit of ’76 trio—were among the most popular of the theme park memorabilia. Also offered was a set of commemorative plates featuring newly created art of American Revolution scenes, humorously portraying Disney characters such as Minnie Mouse and Scrooge McDuck as historical figures. The quaintly thrilling Sadie Mae score was available in its entirety at both parks on a distinctive picture disc, A Musical Souvenir of America on Parade.
America on Parade unfolded more then twelve-hundred times, and before its final hurrah on September 6, 1976 in Florida and on September 12, 1976 in California, an estimated twenty-five million people experienced the parade, the largest audience ever to view a live performance up until that time. Spectacularly exceeding its goal of giving that pyrotechnic Fourth of July feeling every day of its 15 month run, America on Parade celebrated in unforgettable fashion what the Sherman Brothers’ lyrics from “The Glorious Fourth” call “the bang-up, uproarious, flag-waving glorious fourth, the Fourth of July!”
Walt Disney’s premier live-action director Robert Stevenson on the Blackbeard’s Ghost set with Peter Ustinov and Dean Jones. “I really wasn’t sure what to expect from Peter,” said Robert. “He is, after all, a director, too. But he disarmed me with his simple wholehearted co-operation. And he figured that the best way he could help was to leave the directing to me unless I asked for his opinion. I should think that, being a director, he understood full well the problems of direction and gave his full support as he would have liked me to give mine had out positions been reversed.”
“The most fearsome pirate ever,” Ian McShane, who portrays the infamous Blackbeard in Pirates of the Caribbean: On Stranger Tides, rightly observes. “There’s a legion of stories about him, and whether they’re true or not, he’s now part of pirate mythology.” Blackbeard’s Ghost (1968) followed in the side-splitting tradition of Walt Disney’s wacky live-action comedies, such as The Shaggy Dog (1959) and The Absent-Minded Professor (1961). This comedy-fantasy, big-screen success tells the salty tale of the spectral return of Blackbeard’s spirit to the New England coastal town of Godolphin where the supernatural scallywag attempts to perform just one good deed so that his spellbound spirit can finally rest. To achieve this seemingly impossible task, Captain Blackbeard sets out to help the landlubber of a track coach (Dean Jones) — the only one who can see or hear the ghostly pirate — and his less-than-athletically talented Godolphin College team win a big meet. But before we dive into how this unlikely tale became a hit, we’d better bring you up to speed with the history of Blackbeard the man. He was a real-life British-born buccaneer who plundered along the West Indies and the eastern coast of what were then the American colonies in the early 18th century. He was named Edward Teach by birth, but eventually earned his nefarious nickname due to his fearsome facial hair. Blackbeard relied on his ferocious appearance to intimidate his quarry and it was rumored that he tied lit fuses to his infamous beard to create a supernatural mist around him in order to frighten his foes into giving up their treasure.
This magnificently piratical portrait was painted by David Jonas and is seen in the film in the lobby of Blackbeard's Inn. "Extraordinary," remarked Peter Ustinov upon seeing the painting for the first time. "It's a very good likeness. But I believe I would be afraid to hang it in my house. My dogs would never stop whining at it, wanting it to pat them or feed them."
Acclaimed illustrator Ben Stahl was fascinated with this larger-than-life character from the past and wrote a book about him. “Edward Teach, alias Blackbeard, was the craftiest rogue who ever buckled a swash and yet he had a streak of fun and humor in him that made many of his victims almost forgive his outrages,” Stahl, who is known for his evocative, romantic artwork seen in many magazines including The Saturday Evening Post and for grand promotional art for Hollywood films like Ben-Hur (1959), says. Stahl wrote the 1965 novel Blackbeard’s Ghost by first painting the plot and then writing it out. While he was in Burbank completing an assignment for Warner Bros. Ben had lunch with Walt Disney and showed him the unfinished manuscript of Blackbeard’s Ghost, with its imaginative tale of two boys who accidentally conjure up the specter of the notorious Edward Teach. Walt encouraged Stahl to complete the book, adding, “When it’s finished, I’d like to have a look at it.” Once it was completed, Stahl gave the unpublished book to Walt and awaited the great showman’s response. Three days later — the same day that publisher Houghton Mifflin accepted the book for publication — Walt telegraphed Ben, “I think it turned out swell. I would like to have the film rights.” It was clear the pirate’s tale with a comedic twist captured Walt’s imagination for, as director Robert Stevenson, an Academy Award®-nominee for Mary Poppins (1964), revealed, Walt was heavily involved in the creation of the film’s storyline. “He seemed to have an enormous amount of energy when he worked on [the script],” Stevenson reported. Though the completed film was not released until over a year after his death, Blackbeard’s Ghost was planned and cast with Walt’s involvement and approval. In fact, filming was well under way before Walt’s untimely passing in December 1966. Starting with The Absent-Minded Professor, Walt had hit upon the crowd-pleasing concept of combining cartoony impossibilities with sporting events, so he replaced the book’s two boys with an adult coach so that Blackbeard — more interested in mischief than mayhem — could invisibly help his track team to uproarious effect. The wacky, witty screenplay was crafted by Bill Walsh and Don DaGradi, the Oscar®-nominated screenwriters of Mary Poppins. A seasoned animation artist, DaGradi was particularly adept at creating gravity-defying sight gags that could only come to the screen via the magic of Disney special effects. The most special effect of them all, however, was Peter Ustinov’s portrayal of Captain Blackbeard. “Walt liked Ustinov,” Bill Walsh noted, and no wonder. At the time Walt cast him as the roguish Blackbeard, the multi-talented British star had authored 16 plays, seven movie scripts and six books, produced five top-selling records, starred in 14 plays, directed six films and appeared in over 100 others, written and starred in his own radio show and also served as a newscaster, magazine writer and illustrator. A few of Peter’s many awards included two Oscars, for his supporting roles in Spartacus (1960) and Topkapi (1964) and an Emmy® award for Best Performance by an Actor for portraying Samuel Johnson on television’s Omnibus. (He would go on to win two additional Emmy awards.) “Ustinov,” Walsh added, “is probably one of the most brilliant men in out industry. He is considered one of the world’s greatest conversationalists and can tell stories for hours on end. He mimics and impersonates everyone there is. In fact, Peter was so entertaining that people from all over the lot would find an excuse to drop in for a minute that would somehow stretch into half an hour. He was marvelous during takes as well. Since he writes beautifully, he was always changing the dialogue. This would often result in funnier lines and business, but it more importantly kept the other actors fresh. Whereas third and fourth takes of the same scene can be deadly, Peter made each one different.”
Held at Hollywood's grand Pantages Theater, the "spooktacular" Blackbeard's Ghost premiere scared up scads of movie stars (including Dean Jones, Suzanne Pleshette, Elsa Lanchester and Hank Jones) and Olympic athletes. Held on February 8, 1968, the event was a benefit for Southern California Chapter of the United States Olympians as the organization prepared to help US athletes attend the 1968 Summer Olympics in Mexico City.
The rotund Renaissance man was paired with co-star Dean Jones. This popular Disney player filled the role of Blackbeard’s straight man with his own masterfully played comedic reactions. “Dean’s job was especially difficult in this film,” observed Bill Walsh, “because he had to play straight man to Peter Ustinov. Peter is a sort of quick-witted and whimsical genius that never played a scene the same way twice. This kept everyone in the cast on their toes, particularly poor Dean, who as much as everyone else enjoyed Peter’s adlibbing. But the nuttier the situation got, the more sincere Dean became. It isn’t every actor who can do this. Most of them go wrong in fantasy-comedies because they get cute with the material. A ghost can cut-up but not the serious lead. Dean was able to play it straight, and that, as much as Peter Ustinov’s magnificent performance, is responsible for the solid piece of entertainment that we have in Blackbeard.” The bi-play between the modern day guy and the 18th century swashbuckler may be another reason why the track coach character was added to the story. Jones and Ustinov’s witty banter is a favorite element of the film among its fans. Cast as a child psychology professor at Godolphin College, Suzanne Pleshette had already been successfully teamed with Dean Jones in The Ugly Dachshund (1966). A gifted comedienne whose comic talents were fully celebrated the classic TV series The Bob Newhart Show, Suzanne enjoyed working at the Disney Studios, and Walt was tickled by the spark the sassy actress brought to his comedies. Elsa Lanchester, a Disney favorite from Mary Poppins and That Darn Cat (1965), plays Emily Stowecroft, the eccentric innkeeper who welcomes the new track coach to Blackbeard’s Inn. Known for roles in classic films since the 1930s — most infamously as the iconic female monster in Bride of Frankenstein (1935) — this veteran character actor brought her piquant brand of comedic performance to the proceedings as the leader of an unlikely woman’s group called the Daughters of the Buccaneers. Cast as one of its elderly but energetic members, former silent-screen star Betty Bronson had been personally selected by author J.M Barrie for the first screen version of Peter Pan (1924; Walt Disney reportedly purchased this film in 1938 when he first began plans to produce his animated version). Kathryn Minner was famous as the “Little Old Lady” in a series of Dodge TV commercials for which she won many awards and led to guest appearances on numerous TV shows, including The Tonight Show Starring Johnny Carson. Celebrating her 75th anniversary in show business, character actress Elsie Baker had a talent for screaming for many famous actresses who couldn’t get the proper terrified quality into their own shrieking, including in several Alfred Hitchcock productions. Elsie doesn’t scream in Blackbeard though she felt like it, “especially when that old pirate ghost just appears outta nowhere.”
In a field day of onscreen Disney special effects, Blackbeard does his darnedest to help the Godolphin College track team win the big meet, all part of his plan to help the Daughters of the Buccaneers to preserve historic Blackbeard's Inn. Hank Jones portrays Godolphin's "star" athlete Gudger Larkin. Walt Disney himself cast Hank in Blackbeard's Ghost, and the comedic character actor went on to many other Disney films including The Barefoot Executive (1971), Herbie Rides Again (1974), and The Shaggy D.A. (1976).
Thanks to Blackbeard‘s ghostly antics, the film’s visual reaches high tide during the track meet when the piratical poltergeist lends an invisible hand to Godolphin’s puny track-and-fielders. Even so, there was more to please the eye than Blackbeard’s spectral shennigans during the athletic event. “To make the sequence come across as an authentic college meet, we needed some cheerleaders to complete the picture,” said Bill Walsh. “We were watching a UCLA football game and it seemed that the cameraman was enamored with the UCLA cheerleaders, and we saw more of them than we did the game. We practically had to call the paper to get the results of the game. UCLA won. But the point is that we did see a lot of the girls in action. And they were very attractive. When the time came to select cheerleaders for the track meet, there was no question in our minds. They did an excellent job. Just like on TV.” The names of the cheerleaders are Linda Lockwood, Elaine Larkins, Holly Borowiak, Donna Laughlin, Lynn Switzer and Renee Stuber. “Peter, who is probably one of the most brilliant figures in our industry today, even learned their routine for one of the scenes,” Walsh reported. One of film’s most memorable visual treasures is the larger-than-life painting of the legendary painting that hangs in a place of honor in Blackbeard’s Inn. Illustrator David Jonas, who was a Disney Studios artist in the late 1960s to the early 1970s, painted this magnificent portrait. “It’s not easy doing a portrait of someone that you can’t even get a good recent photo of,” remarked David. “I did a lot of research on what the actual Blackbeard looked like and portraits of that period so that I could give the figure an authentic pose and background. As it turned out, I had the pirate standing on the beach with a sinking ship on the horizon, suggesting his prowess over the seas. I roughed in the figure and with wardrobe designer Bill Thomas worked out the costume he would be wearing. I took the six by four foot canvas home with me and tinkered with it for about three weeks, and using some old pictures of Ustinov in magazines I’d found, I more or less sketched in the face and added a goodly roguish beard. By the time Peter arrived at the studio for production, the painting for all but subtle modeling and little details was finished.”
Once a pirate, always a pirate: Blackbeard attempts to lift the purse of Godolphin professor Jo Ann Baker (Suzanne Pleshette) even though it's in the name of performing a spell-breaking good deed. Walt Disney reunited the couple from The Ugly Dachshund because of the chemistry between Suzanne and leading man Dean Jones.
Blackbeard’s Ghost materialized at a splashy premiere on February 8, 1968, at the Pantages Theater on Hollywood Boulevard near Vine. Befitting the film’s sports theme, this swank affair benefited the Southern California Chapter of the United States Olympians, comprised of former Olympic athletes actively promoting the current teams. More than 100 Olympic greats attended, including Congressman Bob Mathias and Jesse Owens. The premiere was hosted by Disneyland Ambassador Sally Sherbin and co-“ghosted” by Ivan Jay (standing in for Ustinov who was unable to attend) as Blackbeard. The 60-piece UCLA Varsity Band, directed by Kelly James, played in front of the glitzy movie palace, accompanied by the UCLA Songbirds and the cheerleaders seen in the film. Renowned sportscaster and captain of the 1936 Olympics gold medal-winning basketball player, Sam Balter was the emcee. The film was introduced by Chairman of the Southern California Olympic Fund Bill Schroeder, who extended his personal gratitude to Disney for inviting the Olympians to sponsor the event. “The house is a complete sell-out thanks to the Olympians themselves, who’ve worked very hard in cooperation with Disney to make this evening the success that it is,” Schroeder said. In addition to Dean Jones, Suzanne Pleshette and Elsa Lanchester (and those behind-the-scenes superstars Bill Walsh, Don DaGradi and Robert Stevenson), James Garner, Edward G. Robinson, Glenn Ford, Troy Donahue and Carol Lynley attended. Once the film rolled, Dean and Suzanne were whisked away to nearby 1313 N. Vine St. for the live broadcast of The Joey Bishop Show for a lively chat about the premiere. (The Joey Bishop Show had promoted both the film and the benefit the night before with guests Bob Mathias and Jesse Owens.) A boatload of fun, Walt Disney’s Blackbeard’s Ghost glitters with sight-gag gems and jewel-like performances, especially from Peter Ustinov as the ghostly pirate. In Ustinov, Disney gained a valuable member of its repertory company, for this versatile performer would return for several other projects: the Walsh -written and -produced/Stevenson-directed One of Our Dinosaurs is Missing (1975); Treasure of Matecumbe (1976); and most importantly Robin Hood (1973), for which Peter gave one of the richest vocal performances in all of Disney animation as the sniveling pretender-to-the-throne Prince John. In 1997, Disneyland’s Pirates of the Caribbean attraction boasted a new scene with two brigands attempting to haul treasure from the burning village that included a salute to Blackbeard’s Ghost: the film’s painted portrait of the notorious pirate among the booty. Today as much as ever, fans of Disney pirates treasure Blackbeard’s Ghost, starring “The Jolliest Roger of them all!”
