Enjoy these mouth-watering Choux Fritters from Disneyland’s Royal Street Veranda in New Orleans Square.
Yield: 3 dozen fritters
½ cup (1 stick) butter or margarine
1 cup boiling water
1 cup all-purpose flour, sifted
½ teaspoon salt
4 cups vegetable oil
Method of Preparation
- Combine butter, boiling water, flour, and salt in a saucepan over moderate heat. Beat vigorously until mixture leaves side of pan and forms a ball. Remove from heat and cool slightly.
- Spoon into a bowl mixer or food processor with a steel blade. Add eggs one at a time, beating well after each addition. When all the eggs have been added, mixture should hold its shape in a spoon.
- Heat oil to 375°F. Dip a tablespoon first in hot oil, then in batter. Carefully drop a tablespoon of hot batter into the oil and cook until brown. Remove with slotted spoon and drain on paper towels.
- Sprinkle with sugar and serve hot.
Cook’s notes: The time it takes the fritter to brown in the hot oil depends on the size. Smaller fritters will take about 2 to 3 minutes.
